Ok so I finally did duck breast, 131°F for two hours, seared the skin, absolutely gorgeous plate, best thing I've cooked all year honestly. Then I cut into it at the table and the middle was properly PINK, like rosy pink, and my brain just went "that's undercooked poultry" and I had a small panic.
Everyone ate it, everyone is fine, nobody is ill. But I can't square it in my head. Chicken I would never dream of serving under 165, we had the whole family walkout drama about exactly that on this board. So why is pink duck a restaurant thing and pink chicken is a hospital thing? Same bird family surely? Did I just get lucky, or is this actually fine?
You didn't get lucky, pink duck breast is completely normal, restaurants serve it that way on purpose. It's not the same as pink chicken. Relax and enjoy the fact that you nailed it first try, most of us did not.
The thing that made it click for me: it's a whole solid piece of muscle, not a ground-up thing and not a whole bird with a cavity. Any nasties are on the OUTSIDE, and the surface is the bit that gets hammered by your sear anyway. The inside of an intact muscle starts basically clean.
That's also why a burger has to go further than a steak even though both are beef. Grinding smears the outside all the way through. Same logic, different animal.
Sammy, short version: you did not poison anyone, pink duck breast is a genuine thing and yours was cooked correctly. Now the longer version, because the reasoning is the part worth keeping.
The 165°F (74°C) you rightly refuse to go under for chicken is an INSTANT number: the temperature at which pathogens die on contact, for people who cook to a thermometer and pull the moment it beeps. Sous vide does not work in an instant, it works over time, holding food at a lower temperature long enough to reach the same lethality. Your two hours at 131°F (55°C) is not "undercooked 165", it is a different and equally valid route to a pasteurised piece of meat. The published tables give you the time each temperature needs; 131°F held for a couple of hours clears it comfortably for a breast that thickness.
The second half is what Mike already said, and it is the real answer to your chicken question. Duck breast is eaten as a whole, intact muscle. Bacteria on whole muscle sit on the surface, and the surface is exactly what your searing pan sterilises. The interior of an intact muscle is essentially sterile to begin with, which is why a rare centre is not the risk your instinct screams it is. Chicken breast COULD be treated the same way in principle, the reason nobody does is partly whole-bird handling and partly that chicken breast at 131°F is a rubbery disappointment, so there is no reward to balance the fuss.
Three conditions hold this together, and all three matter. One: it must be whole muscle, never ground or minced duck, because grinding folds the surface through the middle and it goes to the standard safe temperature, full stop. Two: source it from somewhere you trust and keep it cold, in the danger zone (40 to 140°F, 4 to 60°C) for as little time as possible. Three: anyone at the table who is pregnant, immunocompromised, very young, or elderly gets poultry cooked to the standard conservative temperature, no negotiating. Filing this next to the "temperature picks the doneness, time picks the safety" note that finally got steak to stick for me. The instant-versus-over-time thing is the bit I never understood until now.
